Munch on this healthy granola as a snack, eat it like cereal with milk, or sprinkle some on yogurt and you’ve got a PARFAIT.
Ingredients:
- 2 C. rolled oats
- 1/4 tsp. salt
- 1/2 C. almonds, chopped
- 1/2 Tbsp. cinnamon
- 1 Tbsp. ground flax seeds (optional)
- about 2 1/2 Tbsp. coconut oil, melted
- 1/3 C. honey
- 1/2 tsp. vanilla
Instructions:
- Preheat oven to 300 degrees. F.
- Combine oats, salt, almonds, cinnamon and ground flax seeds in a bowl and set aside.
- In a smaller bowl, combine coconut oil, honey, and vanilla.
- Mix wet ingredients into the dry ingredients.
- Spread the mixture on a foil-lined baking sheet.
- Bake 10 minutes. Remove from oven and mix. Spread out again and bake 10 more minutes.
- Remove from oven and let cool completely. The granola will be somewhat soft when you first take it out of the oven, but it will harden during the cooling process. Store in an air tight container once completely cooled.
