Enchilada-style Burrito Recipe

This enchilada-style burrito recipe is great for using up leftover rice and beans. The enchilada sauce adds a nice flavor to make it taste more gourmet than a normal burrito.

Ingredients (1 burrito):

  • 1 large burrito-style flour tortilla
  • about 2 Tbsp. red enchilada sauce
  • about 1/2 or 3/4  C. cooked SPANISH RICE
  • about 1 C. cooked BEANS
  • about 1/3 C. cheese
  • 2 Tbsp. salsa or chopped tomatoes
  • 1 Tbsp. sour cream

Instructions:

  1. Place tortilla on a plate and spread enchilada sauce on top side. Turn tortilla over on the plate so that the enchilada sauce is face-down.
  2. Put rice, beans, and about half of the cheese on top of the tortilla. Fold into a burrito (this part gets a little messy with the enchilada sauce getting on your hands).
  3. Top with the rest of the cheese. Microwave about 2 1/2 minutes or until cheese on top is melted. Top with salsa and sour cream.
