Healthy Muffins with Molasses

These healthy muffins are delicious! There is not even any oil or butter in this recipe, and they still have a great moist, muffin-y texture. The molasses adds a sweet taste and the walnuts add to the texture. Feel free to add some raisins if you like raisins.

These muffins can be eaten as a quick breakfast or snack. Or dessert.

Healthy Muffins with Molasses

Ingredients (yields 12-16 muffins):

  • 1 C. whole wheat flour
  • 1/2 C. all-purose flour
  • 1/4 cup ground flaxseed/flaxseed meal
  • 1 C. regular oats
  • 1/2 C. packed brown sugar
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 C. walnuts, chopped
  • 1 C. buttermilk (or use an easy BUTTERMILK SUBSTITUTE!)
  • 1 large egg
  • 1 banana, mashed
  • 1/2 C. applesauce
  • 1/4 C. molasses

Instructions:

  1. Preheat oven to 350 degrees F. and grease a muffin pan with cooking spray. 
  2. Make your buttermilk substitute if you don’t have buttermilk. It will need to sit a few minutes while you prepare the rest of the batter.
  3. Mix together dry ingredients (flours, ground flaxseed, oats, sugar, salt, baking soda, baking powder, cinnamon, and walnuts).
  4. In a separate bowl, combine mashed banana, egg, applesauce, buttermilk, and molasses.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Scoop about 1/4 C. of muffin batter into each muffin cup.
  7. Bake for about 16-18 minutes, or until toothpick comes out clean.

These healthy muffins are scrumptious on their own, but if you want to wow yourself, then cut one in half, and let some butter melt into each half of the muffin before eating. You can also spread a little jam on top of the melted butter to add to it if you so desire.
