These strawberry oatmeal muffins are perfect for a quick breakfast or snack. Not too sweet and not too dense. You can substitute other things like nuts, blueberries, or raisins in place of the strawberries.
Ingredients (makes 12 muffins):
- 1 C. quick cooking oats
- 1 C. milk
- 1 egg
- 1/4 C. canola (or vegetable) oil
- 1 C. all-purpose flour
- 1/3 C. brown sugar
- 1/2 tsp. salt
- 2 tsp. baking powder
- 3/4 C. chopped strawberries
Instructions:
- Preheat oven to 425 degrees F. and lightly grease a muffin pan.
- In a small bowl, combine oats and milk. Let soak for 15 minutes.
- In another bowl, mix egg and oil.
- Add oat mixture to egg mixture.
- Add in flour, sugar, salt, and baking powder. Then mix only until the flour mixture is no longer dry.
- Fold in the chopped strawberries.
- Pour batter into muffin cups evenly, about 2/3 full.
- Bake for 20-25 minutes, or until toothpick comes out clean.
