Ingredients:
1 frozen 9″ pie crust
3 eggs
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. ground cinnamon
1/3 C. milk
1 zucchini
1 medium tomato (peeled)
3 green onions
about 1/5 white onion (or 1/2 C. chopped onion)
1 C. fresh baby spinach
1 C. grated cheddar cheese
Instructions:
Preheat oven to 450 degrees F. Line pastry shell with double-layered foil and bake for 4 minutes. Remove the foil and bake 4 more minutes. Remove from oven and reduce heat to 350 degrees F.
Wash and chop vegetables (zucchini, tomato, green and white onions, and spinach). Mix with grated cheese and pour into pie crust.
Mix together eggs, milk, salt, pepper, and cinnamon. Pour evenly over vegetables in the pie pan.
Place pie pan on cookie sheet. Bake at 350 degrees F. for 40 minutes. Let stand 10 minutes before cutting.
