Brown Rice with Vegetables Dinner Recipe

Ingredients:

  • 2 1/2 C. water + about 2 Tbsp. water
  • 1 C. dry Brown Rice (long grain)
  • 1 clove garlic minced
  • about 4 Tbsp. chopped onion (I used half yellow onion and half purple onion)
  • 1/2 red bell pepper (chopped)
  • 1/4 tsp. salt

Instructions:

  1. Bring water to a boil in medium pot.
  2. While water is warming up, chop the garlic, onions, and bell pepper.
  3. Add rice and chopped vegetables to boiling water. Add salt and stir.
  4. Cover the pot with a lid, reduce heat to a simmer, and cook for 45 minutes.
  5. Remove rice from heat. Fluff just before serving.
