This just-like whoopie pie recipe is very similar to Whoopie Pies, but really reminded me of a Hostess Ding Dong since they look more like a cupcake with cream filling. They started out as Double Chocolate Pumpkin Muffins. And that’s what they are, accented with a little Cool Whip. Enjoy the ease and the heavenly, moist deliciousness!
Just-like Whoopie Pie:
Ingredients (yields about 20 Whoopie Pies):
- 1 egg
- 1 can (15 oz) pumpkin puree
- 1/2 C. water
- 1 Devil’s Food Cake Mix (about 16.5 oz… I used Duncan Hines brand)
- about 1 C. semi-sweet chocolate chips
- 1 (8 oz) container Cool Whip, or homemade whipped cream
Instructions:
- Preheat oven to 350 degrees F. and spray muffin pan with cooking spray.
- In a bowl, stir together egg, pumpkin puree, and water.
- Mix in chocolate cake mix (just pour the dry cake mix in).
- Fold in chocolate chips.
- Spoon batter into muffin cups, about 2/3 or 3/4 full.
- Bake for about 18-22 minutes, or until toothpick comes out clean.
- Let the muffins cool completely.
- When ready to serve, slice each muffin in half horizontally. Spread 1-2 Tbsp. Cool Whip or homemade whipped cream on the bottom half and then place the top back on.
