I was so hesitant to try a new chocolate chip cookie recipe because THIS one is the one we love and trust to always turn out yummy and healthier than other chocolate chip cookie recipes. But it’s also healthy to try new things sometimes. 🙂 Especially if they are things packed with oatmeal. So here is a Betty Crocker recipe modified by using only half the amount of butter called for and 1/2 cup less sugar. They turned out great! My little boy couldn’t keep his hands out of the dough.
Ingredients (makes about 4 dozen):
- 1/2 C. unsalted butter (just 1 stick), softened
- 1 C. brown sugar
- 1 tsp. vanilla
- 1 egg
- 1/4 tsp. salt
- 1 tsp. baking powder
- 2 C. quick oats
- 1 1/2 C. all purpose flour
- 1 C. chocolate chips
- 1/2 C. chopped walnuts
Instructions:
- Preheat oven to 350 degrees F.
- Cream together the softened butter and brown sugar. Add vanilla and egg and mix well.
- Stir in salt and baking powder, then add oats and flour. Mix well.
- Stir in chocolate chips and walnuts (I used my hands because the dough is very thick).
Spoon about 1 Tbsp. sized dough balls onto a cookie sheet, about 1 inch apart from each other. Bake for 7-9 minutes in preheated oven. Let sit for a minute or two before removing from cookie tray.
