This No Bake Strawberry Cheesecake is seriously one of the best cheesecakes I’ve ever tasted!
It’s hard to believe how easy it is to make! And what’s better than a homemade cheesecake topped with a delicious strawberry sauce? This is a perfect summertime dessert since it’s no bake, and would make a fun Valentine’s Day treat for your sweetie as well. 🙂
No Bake Strawberry Cheesecake Recipe
- 7 graham crackers, finely crushed
- 1 Tbsp. brown sugar
- 3-4 Tbsp. melted butter
- 2-3 tsp. water
Filling Ingredients:
- 1 (8 oz) package cream cheese, softened
- 1 (8 oz) container Whipped Topping (or your own homemade whipped cream)
- 2 Tbsp. sour cream
- 1/2 C. powdered sugar
- 1 tsp. vanilla
Strawberry Topping Ingredients:
- about 20 strawberries (about 2 C.), chopped
- 1 Tbsp. lemon juice
- 1/3 C. sugar
Instructions:
- For crust, mix together crushed graham crackers and brown sugar in a glass pie pan. Add melted butter and water. Mix into crumb mixture and press onto bottom and sides of pie pan to shape the crust.
- For filling, soften cream cheese in a microwave safe bowl, microwaving a little at a time, until it is soft enough to easily stir with a spoon. Combine soft cream cheese, whipped topping, sour cream, powdered sugar, and vanilla in a mixing bowl. Stir (or beat) until smooth. Spoon mixture into pie crust.
- Refrigerate for at least 4 hours (but I think it turns out even better if refrigerated over night).
- For topping, combine chopped strawberries, lemon juice, and sugar in a small saucepan. Bring to a boil, then reduce heat to simmer for a few minutes. Let cool, then refrigerate.
- To serve, spoon about 1-1 1/2 Tbsp. of the topping onto each piece of cheesecake. Enjoy!
