Ingredients (for about 3 dozen+):
- 1/2 C. butter (1 stick), softened
- 2/3 C. brown sugar
- 1/2 tsp. vanilla
- 1 egg
- 3/4 C. all-purpose flour
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 1/2 C. rolled oats
- 3/4 C. raisins
- 1/4 C. chopped walnuts, optional
Instructions:
- Preheat oven to 350 degrees F.
- Cream together the butter, brown sugar, vanilla, and egg.
- Add flour, salt, baking soda, and cinnamon. Stir.
- Add oats, raisins, and walnuts. Stir.
- Place dough in the freezer for about 10 minutes (this is optional… I read that it makes the cookies chewier.)
- Scoop about 1 1/2 tsp. scoops onto cookie sheet, about 2 inches apart from each other.
- Bake for about 8 minutes. Remove from oven and let sit for 5 minutes before transferring cookies to a plate or cooling rack.
