These strawberry cake mix cookies are so easy to make and they taste amazingly delicious. They are moist and chewy on the inside and slightly crispy on the outside. You can eat them plain or top with cream cheese frosting.
I would have never thought to make these cake mix cookies, except that I happened to have a strawberry cake mix box in the kitchen. And my son happened to open the box and rip open the bag of cake mix. I also just happened to be rushing around trying to come up with a last minute treat to take to the little 4-year-old children I help teach at church. And we happened to have some extra cream cheese frosting in the refrigerator. So strawberry cake mix cookies it was!

Strawberry Cake Mix Cookies Recipe
Ingredients:
- 1 (15.25 oz) strawberry cake mix
- 1 stick unsalted butter, softened
- 2 eggs
- 2 tsp. vanilla extract
- optional: cream cheese frosting
Instructions:
- Combine cake mix, eggs, softened butter, and vanilla until well mixed. Set the mixture in the freezer for about 15 minutes.
- Preheat oven to 350 degrees F. and spray a cookie sheet with cooking spray.
- Scoop tablespoons of the dough onto the cookie sheet and bake for about 8-12 minutes (edges should start getting a golden color but the center won´t look completely done). Let the cookies cool for about 3 minutes before removing them from the cookie sheet so they can finish cooking.
- When the cookies are cooled, you can frost with cream cheese frosting (I used store-bought this time, but it´s super easy to make your own cream cheese frosting).
