You can buy beef taquitos at the store, but they’re packed with salt and highly processed. Why not make them, in a quick and healthy way, in your own kitchen?
Ingredients (for 22 taquitos):
- 22 flour tortillas (I used Guerrero brand)
- about 1 1/2 lb ground beef
- 1/2 yellow onion, diced
- 1/4 bunch Italian parsley, chopped
- about 1/2 Tbsp. canola oil
- 1 (1.25 oz) packet of Taco Seasoning Mix
- 1 (or 2) avocados, mashed
- 8 oz sour cream
- about 1 Tbsp. lemon or lime juice
- cooking spray
Instructions:
- Put oil in a pan and turn the heat to medium heat.
- Put onions in pan and cook them, mixing frequently, until translucent.
- Add ground beef. Mix frequently so that there are not too many big clumps. Turn the heat a little higher.
- When all of the beef is browned, add the chopped parsley and mix/cook about 2 minutes.
- Spoon out the remaining grease from the pan.
- Add the taco seasoning packet to the beef, onion, and parsley. Mix.
- Combine mashed avocado with sour cream and lemon juice.
- Preheat oven to 425 degrees F.
- Spoon about 1 Tbsp. of the sour cream mixture and about 1 1/2 or 2 Tbsp. of the ground beef mixture onto each tortilla.
- Roll the tortillas up tightly (the brand I used were thinner and pretty flexible, but if your tortillas are cracking, then microwave them, a few at a time, between two damp paper towels for about 20 seconds).
- Line two 13×9 inch pans with foil. Spray with cooking spray. Place rolled tortillas in pans. Spray the top lightly with cooking spray and you can sprinkle a little salt on top too.
- Bake in the oven for about 15 minutes, or until the ends of the tortillas are lightly browned and crispy, like so:
