Ingredients (makes 5- 6 servings):
- 3 C. cooked brown rice (1 C. uncooked)
- 1 or 1 1/2 C. steamed broccoli
- about 1 1/3 C. grated Colby Jack cheese
- 2 Tbsp. butter
- 3 Tbsp. all-purpose flour
- 1/2 C. chicken broth
- 1/2 C. milk
- salt and pepper to taste
Instructions:
- Preheat oven to 350 degrees F.
- Melt the butter in a saucepan on medium-low heat. Add the flour and stir.
- Add chicken broth and milk. Stir (until it becomes about the texture of condensed Cream of Mushroom Soup). Add salt and pepper to taste.
- Combine cooked brown rice, steamed broccoli, 2/3 C. cheese, and white sauce in a glass 8×8 inch casserole dish.
- Sprinkle remaining cheese on top.
- Bake uncovered for about 20 minutes.
