Brown Rice and Broccoli Casserole

I hope you enjoy this simple, healthy recipe as much as my family did! : )

Ingredients (makes 5- 6 servings):

  • 3 C. cooked brown rice (1 C. uncooked)
  • 1 or 1 1/2 C. steamed broccoli
  • about 1 1/3 C. grated Colby Jack cheese
  • 2 Tbsp. butter
  • 3 Tbsp. all-purpose flour
  • 1/2 C. chicken broth
  • 1/2 C. milk
  • salt and pepper to taste
Instructions:
  1. Preheat oven to 350 degrees F.
  2. Melt the butter in a saucepan on medium-low heat. Add the flour and stir.
  3. Add chicken broth and milk. Stir (until it becomes about the texture of condensed Cream of Mushroom Soup). Add salt and pepper to taste.
  4. Combine cooked brown rice, steamed broccoli, 2/3 C. cheese, and white sauce in a glass 8×8 inch casserole dish.
  5. Sprinkle remaining cheese on top.
  6. Bake uncovered for about 20 minutes.
