Cheesy Stovetop Potatoes Dinner Recipe

Potatoes have been one of my favorite foods ever since I was a little girl. I threw this recipe together hoping to make scalloped potatoes, but they turned out more like chunky, creamy, cheesy mashed potatoes. Delicious! And it was nice not having to turn the oven on to make them : )

Ingredients (makes about 5 servings):

    • 3 large Russet potatoes
    • water
    • 2 Tbsp. butter
    • 1 C. milk
    • salt
    • pepper
    • a pinch of crushed Rosemary
    • a dash of Thyme
    • a dash of garlic powder
    • about 1/2 tsp. Paprika
    • about 1 or 1 1/2 C. grated cheddar cheese

(If you are interested in adding more ingredients, you can add chopped yellow onion to the potatoes while they’re cooking. You can also experiment with other cheeses, like grated Parmesan).

Instructions:

      1. Peel and wash the potatoes. Slice them into somewhat thin slices (about 1/8 inch).
      2. Place the potatoes in large pan and add water to almost cover the tops. Place lid on top. Bring to a boil and let boil for about 15 minutes.
      3. Poke the potatoes with a fork to make sure they are soft enough to eat. If they are ready, drain out the excess water. Bring back to the stove and reduce heat to medium-low.
      4. Add the butter. Let the butter melt, then add the milk. Stir the potatoes around gently.
      5. Add your seasonings (salt, pepper, Rosemary, Thyme, garlic powder, and Paprika). You will need to estimate how much because I didn’t keep track of the measurements- just add little by little until it tastes good to you, and leave a comment below!
      6. Stir the seasonings gently into the potatoes. Add grated cheese and stir.
      7. Serve warm. Goes great with a fresh salad or other vegetables!
