This recipe came from my mom, who always makes fabulous food!
Ingredients:
- 1 small green cabbage, chopped fine
- 1 bunch green onions, chopped (optional)
- 2 packages uncooked Ramen noodles
- 1 1/2-2 lbs. chicken, cooked and diced
- 2 Tbsp. olive oil
- sesame seeds, slivered almonds, and/or sunflower seeds
Sauce:
- 1/2 C. canola oil
- 7 Tbsp. white vinegar
- 1/2 C. sugar
- 1 tsp. salt
- 1 tsp. pepper
- 2 Ramen seasoning packets
Instructions:
- Combine cabbage, green onions, and chicken in a large salad bowl.
- Lightly brown the sesame seeds, slivered almonds, and/or sunflower seeds with the olive oil on low heat so they don’t burn. Add them to the salad.
- Mix the sauce ingredients and pour over salad.
- Add crushed Ramen noodles and mix.
***This Chinese Salad is best if eaten shortly after being prepared so the ramen noodles don’t get soggy.
