Ingredients:
- 2 1/2 C. water + about 2 Tbsp. water
- 1 C. dry Brown Rice (long grain)
- 1 clove garlic minced
- about 4 Tbsp. chopped onion (I used half yellow onion and half purple onion)
- 1/2 red bell pepper (chopped)
- 1/4 tsp. salt
Instructions:
- Bring water to a boil in medium pot.
- While water is warming up, chop the garlic, onions, and bell pepper.
- Add rice and chopped vegetables to boiling water. Add salt and stir.
- Cover the pot with a lid, reduce heat to a simmer, and cook for 45 minutes.
- Remove rice from heat. Fluff just before serving.
