Ramen Stir-fry with Chicken Dinner Recipe

Ingredients (about 4 servings):

  • 1 1/2 chicken breast (cooked and shredded or cubed)
  • stir-fry vegetables (ex: celery, green beans, mushrooms, broccoli, cauliflower, carrots, etc. You can use a frozen bag of veggies or slice fresh vegetables.
  • about 1 Tbsp. Sesame Oil
  • 2 packages Ramen noodles (cook as directed on package, but drain the water after the noodles are soft and do not add the seasoning packets).
  • 1 Ramen seasoning packet
  • about 2 tsp. soy sauce
  • 1/3 C. water
  • a pinch of ground ginger
  • a pinch of garlic powder

Instructions:

  1. Add cooked chicken and vegetables in a pan with the sesame oil. Cook on medium heat with a lid on top for about 5 minutes (or until veggies are tender).
  2. Cook the Ramen noodles and then add them to the chicken and veggie mix.
  3. In a small bowl, combine the water, Ramen seasoning packet, ginger powder, garlic powder, and soy sauce. Mix well and pour over the stir-fry. Mix and serve warm.
