Roasted Kale

Ingredients (5-6 servings):

  • 1/2 bunch kale
  • about 1 Tbsp. olive oil
  • salt and pepper

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Wash kale and pat dry.
  3. Tear or cut into large-ish pieces.
  4. Place in a glass 9×13 inch baking dish (the kale will shrink quite a bit when it is cooked). Drizzle olive oil on top.
  5. Sprinkle with salt and pepper.
  6. Toss the kale with the oil, salt, and pepper.
  7. Bake for about 10 minutes, tossing once after 5 minutes.
