- Penne or Bowtie pasta (about 12 oz dry)
- small butternut squash
- 1 zucchini
- 1 small purple onion
- 1 red bell pepper
- 1 green bell pepper
- halved or whole mushrooms
- 3 cloves garlic (chopped)
- about 2 Tbsp. olive or canola oil
- salt and pepper
- 2 tomatoes
- fresh basil leaves (about 1/2 or 3/4 cup)
- Shredded Parmesan cheese
Instructions:
Chop all of the vegetables into bite-sized pieces. You can cut them into different shapes just to add more variety if you want. Spray a baking dish with nonstick spray, put vegetables in dish, and mix with oil, salt, and pepper. Bake for about 45 minutes, mixing about every 15 minutes, on 425 degrees F. Remove from oven and add tomato and basil.
Cook the pasta according to the package. Combine vegetables with pasta. Top with shredded Parmesan cheese.
