Tangy Barbeque Chicken

This chicken was delicious!  Sorry I don’t remember the exact amount of onions and chicken I used, but I think it was either 1 or 2 chicken breasts and about 1/3 C. chopped onions. I hope you enjoy the recipe!

Ingredients:

  • 2 Tbsp. canola oil
  • chopped onions
  • chicken (cut into strips or small sections)

Sauce:

  • 3 Tbsp. ketchup
  • 2 Tbsp. soy sauce
  • 3 Tbsp. white sugar
  • 2 Tbsp. lemon juice
  • 1/2 tsp. ground black pepper

Instructions:

Saute the chopped onions with the oil. When the onions are clear, add the chicken strips with a little bit of water.  Cook the chicken until juices run clear. Drain out any excess water. Mix the sauce ingredients in a small bowl and pour over chicken strips. Cover and simmer about 25 minutes, mixing occasionally.

Goes great with POTATO WEDGES and a fresh salad!
