Ingredients (makes about 8 servings):
- 1 Tbsp. vegetable oil
- 1.25 lb. ground turkey
- 1 onion, chopped (about 1 C.)
- 2 Tbsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. dried, crushed oregano
- 1/2 tsp. ground black pepper
- 1/4 tsp. garlic powder
- 2 C. Swanson chicken stock
- 1 C. mild Pace chunky salsa
- 2 (15 oz) cans black beans, drained
- 1 can corn, drained
Instructions:
- Heat oil in a frying pan. Add the ground turkey and chopped onions. Cook, mixing frequently and separating the ground turkey into small bite-size pieces, until turkey is browned. Add chili powder, cumin, oregano, pepper, and garlic powder. Mix.
- Move turkey mixture to a medium/large pot.
- Add chicken stock, salsa, black beans, and corn. Mix.
- Cover with a lid and bring to a boil. Stir and turn the heat medium/low. Cook for about 1/2 hour, stirring occasionally.
Goes great with bread and butter, tortilla chips, or corn bread. Also goes great with a cold glass of milk!
