Broccoli Salad Lunch Recipe

I was a little hesitant to try making a broccoli salad, but it turned out great and I will definitely be making it again!

Ingredients (about 6 servings):

  • 1 1/2 heads of broccoli (cut into small pieces)
  • about 1/4 C. chopped purple onion (I cooked the onions before adding them to the salad because we aren’t fans of raw onions)
  • about 15 cherry or grape tomatoes (slice each one in half)
  • small cubes of cheese (I used Colby Jack, but Cheddar or Mozzarella would also be great!)
  • about 1/4 C. Craisins (optional)
  • 1/4 C. mayonnaise
  • about 1 1/2 Tbsp. white sugar
  • about 2 tsp. lemon juice

Instructions:

  1. Cook the little broccoli pieces in water for about 4 or 5 minutes or until they are neither super crunchy nor super tender. Rinse with cold water, drain, and set aside in a salad bowl.
  2. Saute or boil the onions and then add them to the broccoli.
  3. Slice the tomatoes and cube the cheese and and them and the Craisins to the salad.
  4. In a small bowl, combine the mayonnaise, sugar, and lemon juice. Mix until smooth. Pour over salad and mix. You can serve right away or chill the salad in the fridge before serving.
