Pita Lunch Recipe – with Broccoli Tomato and Cheee

These pita sandwiches are so easy to make and each bite is delicious and healthy too!

Ingredients (2 servings):

  • 2 pieces of whole wheat pita bread
  • about 1 C. steamed broccoli
  • 1 tomato, diced
  • about 3/4 C. grated cheese (we used Colby Jack)
  • about 1/2 Tbsp. Ranch Dressing

Instructions:

  1. Mix together steamed broccoli, diced tomato, cheese, and Ranch Dressing.
  2. Slice one side of each pita bread off (about 1/2 inch) and then spoon in half of the mixture into each pita.
  3. Heat a pan to medium-high heat. Carefully place the pita in the pan and cook on the first side until the bottom is slightly crispy or you can see the cheese beginning to melt on the inside. Carefully turn it over and cook the other side until crispy. Serve warm.
