This recipe is simple, nutritious, and delicious. I hope you like it!
Ingredients (about 5 servings):
- 1 C. brown rice (uncooked)
- 1-2 zucchinis, sliced
- grated cheese
- salt and pepper to taste
Instructions:
- Cook brown rice according to package (takes about 45 minutes). Remove from heat, but keep the lid on so the rice stays warm.
- In a small pot boil just enough water to cover the bottom of the pot about 1/4 of an inch high. Once it is boiling, add sliced zucchini. Reduce heat to a simmer and cook covered for about 5 minutes. Drain water out.
- Serve a scoop of hot brown rice topped with zucchini and grated cheese (you can mix it up a little to help the cheese melt). Add salt and pepper to taste.
