Let’s healthify quesadillas!
Ingredients:
- 2 tortillas
- sliced or grated cheese
- sauteed onion, garlic, bell peppers, and mushrooms (when I make spaghetti sauce I usually just set aside some of the sauteed vegetables before pouring in the tomato sauce and then I put them in the fridge to make quesadillas for lunch the next day)
- sour cream, if desired
Instructions:
- Heat a pan to medium-high heat.
- Place one tortilla in the pan and top with cheese and sauteed vegetables. Place the other tortilla on top. Cook about 1-2 minutes on each side, or until cheese is melted and tortillas are golden brown.
- Serve with sour cream, if desired.
