Ham and Cheese Macaroni with Broccoli Lunch Recipe (Healthy Mac and Cheese!)

Mac’n’Cheese doesn’t have to be just mac and cheese. We’ve been trying out a few variations, but so far this broccoli and ham variation is my favorite. The flavors mend so well together and it is quite filling and balanced and doesn’t require any sides. Plus it is SO easy to just throw in the broccoli and ham that it doesn’t add on much cook time at all.

Broccoli and Ham Mac’n’cheese:

Ingredients:

  • 1 box (about 7.25 oz) dry Macaroni and Cheese
  • 1 Tbsp. olive oil
  • about 1/4 C. milk
  • about 1/3-1/2 C. cooked, cubed ham
  • about 1-1 1/2 C. chopped broccoli
  • salt and pepper
  • optional: medium cheddar cheese, grated (about 1 Tbsp. per serving)

Instructions:

  1. In a small pot, add about 2 inches of water. If your ham is frozen, add it now and bring the water to a boil. If the ham isn’t frozen, wait to add it until the next step.
  2. Once the water is boiling, add the chopped broccoli (and ham if it isn’t frozen). Cover it with a lid, and let simmer for about 5 minutes, or until the broccoli is at your desired consistency.
  3. Drain the water. Sprinkle with a little salt and pepper and mix together.
  4. In a medium pot, make Mac and Cheese according to the instructions on the back of the package (just add 1 Tablespoon of  olive oil instead of 1/4 C. butter- you can’t tell the difference, and it’s much healthier!).
  5. When the Mac and Cheese is finished, add the ham and broccoli and mix to it.
  6. Serve immediately, with a sprinkle of grated cheddar cheese on top if you want a real cheesy taste. Enjoy!
