These healthy vegetable fajitas are a favorite here. I hope you love them too!
Ingredients:
- Corn tortillas
- olive oil
- diced bell pepper
- sliced/chopped mushrooms
- sliced zucchini
- diced onion
- garlic powder
- salt and pepper
- chopped tomato
- optional: chopped cilantro or parsley
- optional: shredded/cubed chicken or turkey
Instructions:
- Heat olive oil in a skillet on medium heat.
- Add onions, bell pepper, zucchini, and mushrooms. Saute until the vegetables are tender and onions are translucent.
- (optional): Add chicken or turkey and mix/cook for a few more minutes.
- Add garlic powder, salt, and pepper.
- Prepare the corn tortillas by heating another pan to medium-high heat. Place a tortilla in the pan and cook for about a minute. Flip, and cook the other side. The tortilla should have little golden bubbles on it.
- Spoon some of the vegetable mixture into each tortilla. Top with chopped tomatoes and cilantro or parsley.
