Healthy Vegetable Fajitas

These healthy vegetable fajitas are a favorite here. I hope you love them too!

Ingredients:

  • Corn tortillas
  • olive oil
  • diced bell pepper
  • sliced/chopped mushrooms
  • sliced zucchini
  • diced onion
  • garlic powder
  • salt and pepper
  • chopped tomato
  • optional: chopped cilantro or parsley
  • optional: shredded/cubed chicken or turkey

Instructions:

  1. Heat olive oil in a skillet on medium heat.
  2. Add onions, bell pepper, zucchini, and mushrooms. Saute until the vegetables are tender and onions are translucent.vegetable fajitas with shredded turkey leftover
  3. (optional): Add chicken or turkey and mix/cook for a few more minutes.
  4. Add garlic powder, salt, and pepper.
  5. Prepare the corn tortillas by heating another pan to medium-high heat. Place a tortilla in the pan and cook for about a minute. Flip, and cook the other side. The tortilla should have little golden bubbles on it.
  6. Spoon some of the vegetable mixture into each tortilla. Top with chopped tomatoes and cilantro or parsley.
