The product of torta recipe is very filling, but if you think you’ll have room for chips and salsa, here is a great, very fresh and easy to make home made salsa recipe here. You can also cut these tortas in half or quarters to make smaller sandwiches if you want a lighter meal.
Ingredients (makes 4 large torta sandwiches):
- 1 (15 oz) can refried black or pinto beans
- 3 Tbsp. Pace chunky mild salsa
- 1/2 tsp. ground cumin
- 3-4 Tbsp. grated Mexican cheese blend
- 1-2 avocados
- 2 Tbsp. minced red onions
- 1 Tbsp. lemon juice
- 1 C. shredded purple or green cabbage
- 4 dutch crunch sandwich buns (or bread of your choice)
Instructions:
- Combine refried beans, salsa, and ground cumin in a microwave-safe bowl.
- Mash avocado in a bowl. Mix in red onions and lemon juice.
- Slice each bun in half (to make a top and a bottom for the sandwich), and pull out some of the soft bread in the centers so that most of the bread is crust.
- Heat the bean mixture in the microwave.
- Layer some bean mixture, shredded cheese, guacamole, and shredded cabbage on each sandwich.
