Chocolate Pumpkin Just-like Whoopie Pie Recipe

This just-like whoopie pie recipe is very similar to Whoopie Pies, but really reminded me of a Hostess Ding Dong since they look more like a cupcake with cream filling. They started out as Double Chocolate Pumpkin Muffins. And that’s what they are, accented with a little Cool Whip. Enjoy the ease and the heavenly, moist deliciousness!

Just-like Whoopie Pie:

Ingredients (yields about 20 Whoopie Pies):

  • 1 egg
  • 1 can (15 oz) pumpkin puree
  • 1/2 C. water
  • 1 Devil’s Food Cake Mix (about 16.5 oz… I used Duncan Hines brand)
  • about 1 C. semi-sweet chocolate chips
  • 1 (8 oz) container Cool Whip, or homemade whipped cream

Instructions:

  1. Preheat oven to 350 degrees F. and spray muffin pan with cooking spray.
  2. In a bowl, stir together egg, pumpkin puree, and water.
  3. Mix in chocolate cake mix (just pour the dry cake mix in).
  4. Fold in chocolate chips.
  5. Spoon batter into muffin cups, about 2/3 or 3/4 full.
  6. Bake for about 18-22 minutes, or until toothpick comes out clean.
  7. Let the muffins cool completely.
  8. When ready to serve, slice each muffin in half horizontally. Spread 1-2 Tbsp. Cool Whip or homemade whipped cream on the bottom half and then place the top back on.
