No Bake Strawberry Cheesecake

This No Bake Strawberry Cheesecake is seriously one of the best cheesecakes I’ve ever tasted!

It’s hard to believe how easy it is to make! And what’s better than a homemade cheesecake topped with a delicious strawberry sauce? This is a perfect summertime dessert since it’s no bake, and would make a fun Valentine’s Day treat for your sweetie as well. 🙂

No Bake Strawberry Cheesecake Recipe

Crust Ingredients:

  • 7 graham crackers, finely crushed
  • 1 Tbsp. brown sugar
  • 3-4 Tbsp. melted butter
  • 2-3 tsp. water
Filling Ingredients:
  • 1 (8 oz) package cream cheese, softened
  • 1 (8 oz) container Whipped Topping (or your own homemade whipped cream)
  • 2 Tbsp. sour cream
  • 1/2 C. powdered sugar
  • 1 tsp. vanilla
Strawberry Topping Ingredients:
  • about 20 strawberries (about 2 C.), chopped
  • 1 Tbsp. lemon juice
  • 1/3 C. sugar
Instructions:
  1. For crust, mix together crushed graham crackers and brown sugar in a glass pie pan. Add melted butter and water. Mix into crumb mixture and press onto bottom and sides of pie pan to shape the crust.
  2. For filling, soften cream cheese in a microwave safe bowl, microwaving a little at a time, until it is soft enough to easily stir with a spoon. Combine soft cream cheese, whipped topping, sour cream, powdered sugar, and vanilla in a mixing bowl. Stir (or beat) until smooth. Spoon mixture into pie crust.
  3. Refrigerate for at least 4 hours (but I think it turns out even better if refrigerated over night).
  4. For topping, combine chopped strawberries, lemon juice, and sugar in a small saucepan. Bring to a boil, then reduce heat to simmer for a few minutes. Let cool, then refrigerate.
  5. To serve, spoon about 1-1 1/2 Tbsp. of the topping onto each piece of cheesecake. Enjoy!
