Beef Taquitos

You can buy beef taquitos at the store, but they’re packed with salt and highly processed. Why not make them, in a quick and healthy way, in your own kitchen?

Ingredients (for 22 taquitos):

  • 22 flour tortillas (I used Guerrero brand)
  • about 1 1/2 lb ground beef
  • 1/2 yellow onion, diced
  • 1/4 bunch Italian parsley, chopped
  • about 1/2 Tbsp. canola oil
  • 1 (1.25 oz) packet of Taco Seasoning Mix
  • 1 (or 2) avocados, mashed
  • 8 oz sour cream
  • about 1 Tbsp. lemon or lime juice
  • cooking spray

Instructions:

  1. Put oil in a pan and turn the heat to medium heat.
  2. Put onions in pan and cook them, mixing frequently, until translucent.
  3. Add ground beef. Mix frequently so that there are not too many big clumps. Turn the heat a little higher.
  4. When all of the beef is browned, add the chopped parsley and mix/cook about 2 minutes.
  5. Spoon out the remaining grease from the pan.
  6. Add the taco seasoning packet to the beef, onion, and parsley.  Mix.

  1. Combine mashed avocado with sour cream and lemon juice.
  2. Preheat oven to 425 degrees F.
  3. Spoon about 1 Tbsp. of the sour cream mixture and about 1 1/2 or 2 Tbsp. of the ground beef mixture onto each tortilla.
  4. Roll the tortillas up tightly (the brand I used were thinner and pretty flexible, but if your tortillas are cracking, then microwave them, a few at a time, between two damp paper towels for about 20 seconds).
  5. Line two 13×9 inch pans with foil.  Spray with cooking spray. Place rolled tortillas in pans. Spray the top lightly with cooking spray and you can sprinkle a little salt on top too.
  6. Bake in the oven for about 15 minutes, or until the ends of the tortillas are lightly browned and crispy, like so:
