Chili Salad

This is a quick and easy lunch or dinner recipe. The warm chili and crisp, cool lettuce leaves go great together and the ranch dressing ties it all up perfectly!

Ingredients (1 serving):

  • 4-5 romaine lettuce leaves, washed and torn into bite-sized pieces
  • 1/2 can of your favorite chili (about 1 C)
  • about 1 Tbsp. ranch dressing

Instructions:

  1. Heat the chili (either in the microwave or stove-top).
  2. Put lettuce pieces in a bowl or on a plate.
  3. Spoon the chili into the middle.
  4. Drizzle with ranch dressing.

If you want to get real fancy, then serve with quesadilla wedges on the side!
