The product of torta recipe is very filling, but if you think you’ll have room for chips and salsa, here is a great, very fresh and easy to make home made salsa recipe here. You can also cut these tortas in half or quarters to make smaller sandwiches if you want a lighter meal.

Ingredients (makes 4 large torta sandwiches):

  • 1 (15 oz) can refried black or pinto beans
  • 3 Tbsp. Pace chunky mild salsa
  • 1/2 tsp. ground cumin
  • 3-4 Tbsp. grated Mexican cheese blend
  • 1-2 avocados
  • 2 Tbsp. minced red onions
  • 1 Tbsp. lemon juice
  • 1 C. shredded purple or green cabbage
  • 4 dutch crunch sandwich buns (or bread of your choice)

Instructions:

  1. Combine refried beans, salsa, and ground cumin in a microwave-safe bowl.
  2. Mash avocado in a bowl. Mix in red onions and lemon juice.
  3. Slice each bun in half (to make a top and a bottom for the sandwich), and pull out some of the soft bread in the centers so that most of the bread is crust.
  4. Heat the bean mixture in the microwave.
  5. Layer some bean mixture, shredded cheese, guacamole, and shredded cabbage on each sandwich.
