The reason I’m categorizing this recipe as “Lunch” is because this salmon is a quick recipe. You can easily cook the salmon and finish eating it within a half hour, but this makes a great dinner recipe as well.

Ingredients:

  • 1 salmon fillet, thawed
  • 1/2 Tbsp. olive oil
  • Lemon Pepper, sprinkled on top

Instructions:

  1. Coat the bottom of  a pan with olive oil on medium-high heat.
  2. Be careful with this step. The oil will splatter. You can wear an apron to protect your clothing, or, to reduce the splattering, rinse the fish in cold running water and pat dry with paper towels before putting it in the pan with the oil.  Place the salmon fillet in the pan. Sprinkle lemon pepper on the top. Let it cook for about 6 minutes, or until the fish is cooked at least halfway up from the bottom.
  3. Turn the fish over. It helps to use a spatula and a fork to turn it over. Sprinkle lemon pepper on this side. Let it cook about 6 minutes more, or until totally cooked through.

This salmon will be crispy on the outside, but moist and flaky on the inside. The Lemon Pepper adds the perfect flavor to the fish. You can serve the fish with a simple salad and french fries.
