Quick and Easy Baby Bok Choy with Cashews Recipe

Ingredients (makes 2-3 servings):

  • 1 Tbsp. olive oil
  • 1 head of baby bok choy (about 1/2 lb)
  • 4 chopped green onions
  • 1 clove garlic, chopped
  • 1/4 tsp. sesame oil
  • about 1/4 C. dry roasted cashews (this recipe is even great without the cashews)
  • salt to taste
Instructions:
  1.  Heat the olive oil in pan on medium-high heat.
  2. Add the green onions, then the garlic, then the bok choy.
  3. Drizzle sesame oil and sprinkle a little salt on top. Cover with lid for about 3-5 minutes or until bok choy wilts down a bit.
  4. Remove lid. Turn heat to low and cook about 1 minute longer, stirring the cashews in gently.
This makes a great side dish for rice or noodles.
