Just so you know, this is one of my family’s favorite baked chicken recipes. My husband said it was definitely restaurant quality or better. I hope you enjoy this recipe as much as we do!
Ingredients (4 servings):
- 4 chicken thighs
- 1 1/2 Tbsp. brown sugar
- 1 1/2 Tbsp. ketchup
- 1/2 Tbsp. lemon juice
- 1 Tbsp. water
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. salt
- 1/2 tsp. dry mustard
- 1/2 tsp. chili powder
Instructions:
- If the chicken is frozen, defrost it in a bowl with hot water for about 30 minutes.
- Preheat oven to 350 degrees F.
- Line an 8×8 inch glass baking dish with foil. Place the chicken in the dish, in a single layer and bake uncovered for about 45 minutes.
- Make the sauce in a small bowl by mixing together all of the ingredients (other than the chicken).
- After the chicken has cooked for 45 minutes, take it out of the oven and carefully remove the layers of skin (fat) and discard. Puncture the meat a few times with a fork. Drizzle the sauce on top of the chicken (about 1 Tbsp. sauce per thigh).
- Place the chicken back in the oven and bake for about 35 or 40 more minutes (or until chicken is thoroughly cooked).
This BBQ chicken goes great with a simple green salad and baked potatoes— just throw in a few potatoes on one of the oven racks while the chicken is cooking and they should be done right around the same time as the chicken.

This post inspired a fabulous dinner tonight. I didn’t have three of the ingredients for the sauce, but I had some bbq sauce in the fridge. So I used that. Also, because I only had two chicken thighs for the meal for the whole family, I cut them up into smaller pieces (about 2 inch pieces). This made for really flavorful chicken and was easier for the kids to eat. I served it with baked potatoes and boiled broccoli and carrots. (My steamer broke.)
The meal was so easy to make. It just a few minutes to prep and then into the oven and on with my evening. (I guess I took a few more minutes later for the veggies.)

That’s great you were able to throw together a yummy dinner! Lately I’ve been realizing that a little bit of meat can go a long way, and good idea to cut the chicken up for ease of eating and more flavor 🙂
