Creamy Ravioli Dinner Recipe with Red Bell Pepper and Green Peas

Ingredients (makes 5-6 servings):

  • 1 (25 oz) bag frozen ravioli (we used spinach and beef, but I’m sure it would taste great with cheese ravioli as well!)
  • about 1 Tbsp. olive oil
  • 1 clove garlic, minced
  • 1/2 of a yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 C. frozen green peas
  • 2 Tbsp. butter
  • 1 Tbsp. all-purpose flour
  • 1 C. milk
  • 3/4 C. grated Parmesan cheese
  • salt and pepper to taste

Instructions:

  1. Cook ravioli according to its package. Drain water and set aside.
  2. Heat olive oil to medium heat in a pan. Add garlic and onions and cook for a few minutes, until onions are translucent.
  3. Add chopped bell pepper and green peas. Cook a few more minutes.
  4. Dump vegetables in the same pot as the cooked ravioli.
  5. Melt the butter in the pan on medium-low heat.
  6. Add flour and stir until smooth.
  7. Add milk, increase heat to medium heat, and continue stirring frequently. Once it starts to simmer, gradually add and stir in the Parmesan cheese.
  8. Once the cheese is stirred in and melted, then turn heat off, season with salt and pepper, and pour sauce in the pot with ravioli and vegetables. Mix together and serve warm.

We had this delicious pasta dish with a green salad, apple slices, and a slice of depression era homemade bread topped with a slice of tomato.
