Ingredients (makes about 6 servings):
- 1 or 2 cloves garlic (chopped)
- about 1/3 C. chopped onion
- 1/2 green bell pepper chopped
- sliced mushrooms (I sliced about 6 or 7)
- 1 (8 oz) can tomato sauce
- 1 (15 oz) can Italian flavored diced tomatoes
- about 1/4 tsp. oregano
- optional: Parmesan cheese or bread crumbs if you want a thicker sauce
Instructions:
- Fill a pot with about 1 inch of water covering the bottom.
- Steam the vegetables.
- Drain out the extra water.
- Add tomato sauce and diced tomatoes and oregano.
- Simmer for a few minutes before serving.
