No-Bake Stuffed Tomatoes Dinner Recipe

This recipe might look a bit daunting at first, but remember you can modify it with the ingredients you have on hand. Even if you just add rice, tuna, and cheese I’m sure the stuffed tomatoes will turn out great!

Ingredients (makes 2 large stuffed tomatoes and extra filling for a third or just to eat):

  • 2 large tomatoes
  • 3/4 C. (uncooked)brown rice (1 1/2 C. cooked)—you can use Jasmine rice if you’d like
  • 2 cloves garlic, minced
  • about 1/3 C. finely chopped onions
  • 1/4 of a green bell pepper, chopped small
  • 2 mushrooms, chopped small
  • 1/2 zucchini, chopped small
  • 1/4 tsp. thyme
  • 1/4 tsp. oregano
  • salt and pepper to taste
  • 1 can tuna (drained)
  • about 1/2 C. Ricotta cheese
  • about 1/4 C. grated Parmesan cheese

Instructions:

  1. Cook the rice according to package.
  2. Heat up pan with enough water to generously cover the bottom of the pan.
  3. Start chopping the vegetables in the order they are listed above, and add them to the boiling water one at a time.

4. Slice the tops of the tomatoes off and carve out the insides. Put the insides in the pan with the other vegetables to cook.5. Add the seasonings (thyme, oregano, salt, and pepper)
6. Add drained tuna , ricotta, and Parmesan cheese.
7. Stuff the tomatoes with the filling.

Another nice thing about not baking the tomatoes is that you can just pick them up to eat them. It would also be fun to try stuffing smaller tomatoes as a party finger food. Enjoy!
