Basil Quesadillas Lunch Recipe

These basil quesadillas are a great option for any of you who don’t like all that salsa dripping out of your quesadillas but still want some great flavor.

Ingredients (yields 2 quesadillas):

  • 4 corn or flour tortillas
  • about 1/3 C. grated mozzarella cheese (or you can use slices)
  • fresh (washed) basil (1, 2, or 3 leaves)

Instructions:

  1. Heat up a frying pan to medium-high heat.
  2. Spread cheese on two of the tortillas.
  3. Rip the basil into smaller pieces and sprinkle on top of cheese.
  4. Top with another tortilla.
  5. Cook each side of the quesadilla until the tortilla has little golden bubbles on each side or until the cheese is melted on the inside.
