Kale is king (queen?) Some of your kids (or other adults!) might not like the taste however. So you should try this sauteed kale, with diced onions. Delicious!
Ingredients:
- 1-2 Tbsp. olive oil
- 1/2 bunch kale
- about 1/4 C. diced onion
- salt and pepper, optional
Instructions:
- Wash kale leaves well. Pat them dry with a dish cloth or paper towel and then chop them into smaller pieces.
- Warm a pan to medium/medium-high heat. Add olive oil.
- When the oil is hot, add the diced onions and frequently saute them so they don’t burn (about 3-4 minutes).
- Add the chopped kale. If your pan in on the smaller side, just add one handful at a time. It shrinks as it cooks.
- Continue mixing until the kale and onions are cooked. The kale should be a bright green color.
- Add salt and/or pepper if desired.
This side would go great with an Asian dish, like fried rice, chow mein, or Ramen stirfry!
