These basil quesadillas are a great option for any of you who don’t like all that salsa dripping out of your quesadillas but still want some great flavor.
Ingredients (yields 2 quesadillas):
- 4 corn or flour tortillas
- about 1/3 C. grated mozzarella cheese (or you can use slices)
- fresh (washed) basil (1, 2, or 3 leaves)
Instructions:
- Heat up a frying pan to medium-high heat.
- Spread cheese on two of the tortillas.
- Rip the basil into smaller pieces and sprinkle on top of cheese.
- Top with another tortilla.
- Cook each side of the quesadilla until the tortilla has little golden bubbles on each side or until the cheese is melted on the inside.
