Ingredients (makes about 2-3 servings):
- about 8 oz. dry Rotini noodles (or preferred pasta)
- 2-3 C. baby spinach, washed and roughly chopped
- about 1 tsp. olive oil
- salt and pepper to taste
- optional: grated cheese (I used a blend of Mild Cheddar and Monterey Jack cheese)
Instructions:
- Cook pasta according to package. Drain.
- Add spinach and place lid over pot to keep the heat in for about 1 or 2 minutes.
- Add olive oil, salt, and pepper. Stir.
- Serve warm and top with a sprinkle of grated cheese if desired.
Goes great with a fresh vegetable salad!
