Serve this salsa with beans, enchiladas or Mexican chicken dishes to add color, freshness, and more health.
Ingredients (yields about 32 oz or 4 cups):
- 4 medium-sized tomatillos (green tomato things)
- 1 jalapeno pepper (remove seeds and flesh like you would with a bell pepper)
- 1-2 avocados
- 1-2 cloves garlic
- 1 Tbsp. yellow onion
- 1/2 bunch curly parsley or cilantro
- water (see instructions)
- salt to taste
Instructions:
- Put all ingredients in blender except for water and salt.
- Slowly add water to blender until the water is at the half point of the rest of the ingredients. If you err, err on the “not enough side” of water so you can add more if needed. You don’t want your salsa to be too watery.
- Blend for about 20 seconds.
- Add a little salt to taste (but it’s even good without salt).

Yes, Teyanna, I believe it probably was, or at least very similar. Got the recipe from Lupita, who also made lots of the food for the reception. 🙂
This green salsa is also delicious without the garlic and onion.
