Double Chocolate Pumpkin Muffins Recipe

Ingredients (yields about 20 muffins/cupcakes):

  • 1 egg
  • 1 can (15 oz) pumpkin puree
  • 1/2 C. water
  • 1 Devil’s Food Cake Mix (about 16.5 oz… I used Duncan Hines brand)
  • about 1 C. semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350 degrees F. and spray muffin pan with cooking spray.
  2. In a bowl, stir together egg, pumpkin puree, and water.
  3. Mix in chocolate cake mix (just pour the dry cake mix in).
  4. Fold in chocolate chips.
  5. Spoon batter into muffin cups, about 2/3 or 3/4 full.
  6. Bake for about 18-22 minutes, or until toothpick comes out clean.
These chocolate pumpkin muffins taste great on their own, but for a more gourmet taste and look (and only one more simple step!), turn them into Woopsie Whoopies!
