If you’re crunched for time but still would like to eat healthy meals, try a quick baked potato and spinach salad dinner.
Ingredients:
- 1 Russet potato, peel on
- 1 chopped green onion
- slice of butter
- a sprinkle of grated cheese
- salt and pepper to taste
- a handful of prepared baby spinach
- 1/2 tsp. balsamic vinaigrette salad dressing
Instructions:
- Wash the potato, place on plate, and microwave about 5 minutes, or until potato is soft and cooked through.
- Slice potato in half and gently mash it up with your fork. Spread a little butter on top and let it melt. Gently mix in cheese, salt, and pepper. Sprinkle chopped green onions on top.
- Drizzle salad dressing on top of spinach and you’re all set to eat!
I just recently had my second baby, and I have never appreciated prepared spinach and prepared other salads so much. I’m trying to eat healthy but it is so easy to just dig into the ice cream or grab a Reese’s from the cupboard. Having fresh fruits and vegetables ready to grab make eating healthy MUCH easier and convenient. It’s especially awesome when you can get a big bag of prepared salad for $1 (like I did last week)! But if nothing’s on sale, you can prepare your own salad so it’s ready to grab when you’re ready to eat.
